Banana Corn Muffins Recipe

Ingredients
  • 1/4 c nuts, sliced (optional) .
  • 1 medium egg, beaten .
  • 1/3 c mashed ripe bananas (one medium) .
  • 1/2 c milk .
  • cooking spray .
  • 1 (8 1/2 oz) package yellow cornbread mix (Jiffy) .
  • 1/4 c raisins (optional)

Directions
  • Step #1 Preheat oven to 350˚.
  • Step #2 Combine milk, bananas, (and nuts & raisins, egg, if using).
  • Step #3 Mix in a medium bowl; stir just until moistened.
  • Step #4 Spoon mixture into well-oiled muffin c.
  • Step #5 Bake for about 20-25 mins until toothpick inserted in center comes out clean.
  • Step #6 Cool for 10 mins before removing from muffin pan.
  • Step #7 Have not tried it, but probably would freeze well.
