Joan's Artichoke And Pasta Salad With Tomato Sauce Recipe

Ingredients
  • 1/2 tsp oregano, crushed .
  • 1/2 tsp basil, crushed (or 1 tbsp. basil, fresh, sliced) .
  • 8 oz ziti pasta .
  • 1 (16 oz) jar marinated artichoke hearts .
  • 1/2 c onions, sliced .
  • 1 tsp salt .
  • 1/2 c parmesan cheese, grated .
  • 2 garlic cloves, minced .
  • 1/4 tsp marjoram, crushed .
  • 1/4 c olive oil .
  • 2 tbsps parsley, sliced .
  • 1 (16 oz) can plum tomatoes, drained, sliced .
  • 1 bay leaf

Directions
  • Step #1 Cook pasta according to box directions, to al dente, & drain.
  • Step #2 Transfer to a serving bowl & toss with the olive oil.
  • Step #3 Drain marinade from the artichokes into a 10" skillet & heat.
  • Step #4 Set the artichokes aside & cut into halves.
  • Step #5 Add the garlic & onions to the marinade liquid in the skillet & let simmer until the onions are translucent.
  • Step #6 Add the tomatoes, herbs (except parsley), bay leaf, & salt.
  • Step #7 Cover up & let simmer 10 mins.
  • Step #8 Uncover & cook another 10 mins.
  • Step #9 Add the artichokes to the sauce mixture & heat for a few mins.
  • Step #10 Remove the bay leaf & stir in the the parsley.
  • Step #11 Remove the skillet from the heat & cool the sauce to about room temp.
  • Step #12 Once cooled, pour over the pasta & toss until well mixed.
  • Step #13 Sprinkle top Parmesan cheese on top or serve along side the pasta.
