Ingredients
  • 1 1/3 c vegetable oil .
  • 1 tsp salt .
  • 1 1/2 tsps cinnamon .
  • 3 eggs .
  • 1 1/2 tsps baking powder .
  • 1 c golden raisins .
  • 3 c all-purpose flour .
  • 2/3 c sugar .
  • 3 c zucchini, "about 3, shredded & unpeeled .
  • 1 1/2 tsps baking soda .
  • 1 c whipping cream, whipped (garnish) .
  • 1 1/2 c walnuts, halved & sliced, approximately 1/2 lb

Directions
  • Step #1 Preheat oven to 350 degrees & generously butter a 10 x 4 1/4 inch tube pan.
  • Step #2 In a large bowl beat eggs well, stir in the sugar & mix in oil.
  • Step #3 Beat 1 min, add zucchini, mix well.
  • Step #4 In medium mixing bowl, sift together flour, baking soda, baking powder, cinnamon & salt.
  • Step #5 Fold this into zucchini mixture, stir in the nuts & raisins.
  • Step #6 Turn batter into well buttered tube pan.
  • Step #7 Bake 1 hr or until toothpick inserted near center comes out clean.
  • Step #8 Let cool about 20 mins.
  • Step #9 Invert cake onto dessert platter & serve this with whipped cream.
