Kelly's Apple Sausage Pancakes Recipe

Ingredients
  • 1/2 tsp dried onion flakes .
  • 1/8 tsp sage .
  • 1 large egg .
  • 1/8 tsp pepper .
  • 3/4 c milk .
  • 1 1/2 tsps sugar .
  • 2 tbsps vegetable oil .
  • 1/2 c chunky applesauce .
  • 1/2 tsp crushed fennel seeds .
  • 1/3-1/2 lb bulk country sausage .
  • 1 1/2 tbsps baking powder .
  • 1 c flour .
  • 1/8 tsp thyme .
  • 1/2 tsp celery salt

Directions
  • Step #1 In small saute pan, sage & thyme, pepper, until sausage is no longer pink, cook sausage, fennel seed, breaking up until sausage is done & well crumbled.
  • Step #2 Drain grease, set aside.
  • Step #3 In large bowl, sugar, baking powder, whisk flour, celery salt & minced onion until well mixed.
  • Step #4 In medium bowl, whisk egg til fluffy.
  • Step #5 Whisk in milk, oil & applesauce.
  • Step #6 Stir in sausage mixture.
  • Step #7 Pour over dry ingredients, & fold just til all is moistened, but batter is still lumpy.
  • Step #8 Bake on hot, non-stick griddle over medium-low heat until golden brown on both sides, turning once.
  • Step #9 Serve with softened butter & warm maple syrup.
  • Step #10 Makes 10 pancakes.
