Step #1 In small saute pan, sage & thyme, pepper, until sausage is no longer pink, cook sausage, fennel seed, breaking up until sausage is done & well crumbled.
Step #2 Drain grease, set aside.
Step #3 In large bowl, sugar, baking powder, whisk flour, celery salt & minced onion until well mixed.
Step #4 In medium bowl, whisk egg til fluffy.
Step #5 Whisk in milk, oil & applesauce.
Step #6 Stir in sausage mixture.
Step #7 Pour over dry ingredients, & fold just til all is moistened, but batter is still lumpy.
Step #8 Bake on hot, non-stick griddle over medium-low heat until golden brown on both sides, turning once.
Step #9 Serve with softened butter & warm maple syrup.
