Ingredients
Apples .
fresh mint leaves (to garnish) (optional) .
1 garlic clove, minced .
1 tsp chili powder .
1 tbsp honey .
2 tbsps unsalted butter .
2 tbsps olive oil .
salt, to taste .
1 lb salmon fillets, skin on, any pinbones removed .
4 sweet apples, Golden Delicious works well .
2 tbsps Dijon mustard .
1 tbsp fresh lemon juice .
1 sprig fresh rosemary .

Directions
Step #1 Rinse the salmon under cold running water; pat dry with paper towels & place this in a shallow dish.
Step #2 In a measuring c, mix the olive oil, garlic, lemon juice, & chili powder; pour mixture over the salmon, mustard, honey, turning to coat.
Step #3 Cover up, place this in the refrigerator & marinade for 2 to 3 hrs or, quick marinade, for 30 mins at about room temp.
Step #4 Preheat the oven to 375°F.
Step #5 Transfer the salmon to a baking dish, reserving the marinade,.
Step #6 Place the dish in the preheated oven & bake 8 mins; pour the marinade over the salmon.
Step #7 Continue to cook & extra 4 to 5 mins, or until the salmon flakes easily with a fork; season this with salt to taste.
Step #8 While the salmon cooks, core the apples & cut each into 8 wedges.
Step #9 In a large heavy skillet, heat the butter over medium-high heat.
Step #10 Add the apples & rosemary reduce the heat to medium, & cook for 5 mins, until tender.
Step #11 Remove from the heat & discard the rosemary.
Step #12 Serve the cooked salmon with pan drippings spooned over & topped with the apples, garnish with fresh mint, if desired.
Step #13 Please Note: The quick marinade time is included in the cooking time.
