Kim's Tilapia With Macque Choux Recipe

Ingredients
  • 5 medium sized tomatoes, seeded & sliced .
  • 2-3 garlic cloves, finely sliced .
  • 4 tilapia fillets .
  • 4 ears bi-color corn on the cob, husked & scraped .
  • 1 jalapeno, seeded & finely sliced .
  • olive oil .
  • 1/2 lime, juice of .
  • 1 tbsp ground cumin .
  • Macque Choux .
  • pepper .
  • cornmeal .
  • 3 tbsps la victoria green chili salsa (jalapeno) .
  • 1/2 tsp paprika .
  • 1 green pepper, seeded & finely sliced .
  • salt .
  • 1/2 red onion, sliced

Directions
  • Step #1 Dredge the fish in the corn meal & season this with paprika, salt & pepper.
  • Step #2 In a saute pan add a little olive oil; then add the garlic, red onion, green pepper & jalapenos.
  • Step #3 Saute for about 5 mins on medium high heat.
  • Step #4 Add the corn & let simmer for about 10 mins.
  • Step #5 While the corn is simmering cook the fish in a little olive oil.
  • Step #6 Just a few mins per side.
  • Step #7 Add the tomatoes & just heat through, & finely add the cumin, lime juice & green salsa jalapeno.
