Step #1 Place sugar, butter, & yogurt into heavy-based saucepan.
Step #2 Stir over low heat/flame until sugar is dissolved; bring to the boil.
Step #3 Boil without stirring until 239F or soft ball stage is reached.
Step #4 Remove from heat.
Step #5 Leave for 4-5 mins.
Step #6 Stir in passion fruit concentrate & coconut cream & whip until mixture is thick & creamy.
Step #7 Pour into lightly buttered 8 x 8 pan.
Step #8 While still warm but firm, cut into squares.
Step #9 Leave until completely set before removing from tin.
