Ingredients
1 c guava jelly or apricot jam .
2 tbsps sliced fresh cilantro leaves .
3 c freshly squeezed orange juice .
Orange-Habanero Mojo .
salt & freshly ground black pepper .
1/2 habanero pepper, seeded & finely sliced .
2 tbsps canola oil .
1/4 c freshly squeezed orange juice .
1 small red onion, finely sliced .
1/2 c fresh lime juice .
2 (1 1/2 lb) pork tenderloins .
1/4 c Dijon mustard .
1 tsp cumin seeds .
4 garlic cloves, finely sliced .
salt & freshly ground black pepper .
2 tbsps canola oil .
salt & freshly ground black pepper .
Guava Glaze
Directions
Step #1 Preheat a grill to high.
Step #2 Brush pork with oil, & then season it with salt & pepper.
Step #3 Set aside a few tbsps of the Guava Glaze for brushing the cooked pork.
Step #4 Grill for 4 to 5 mins per side, brushing frequently with the Guava Glaze.
Step #5 Remove from the grill, brush again with glaze & let rest for 10 mins.
Step #6 Slice into 1/2-inch thick slices, drizzle with the Orange-Habanero Mojo, & serve as soon as possible.
Step #7 Guava Glaze: Whisk jelly, mustard, & orange juice together in a small bowl.
Step #8 Spice up, to taste, with salt & pepper.
Step #9 Orange-Habanero Mojo: Heat oil in a small saucepan over medium-high heat.
Step #10 Add onion & garlic & cook, stirring, until soft, about 5 mins.
Step #11 Add lime juice, orange juice, & habanero chile & bring to a boil.
Step #12 Cook until reduced by half.
Step #13 Whisk in the cilantro & cumin & season, to taste, with salt & pepper.
Step #14 Drizzle over pork.
