Grilled Pork Tenderloin A La Rodriguez With Guava Glaze... Recipe

Ingredients
  • 1 c guava jelly or apricot jam .
  • 2 tbsps sliced fresh cilantro leaves .
  • 3 c freshly squeezed orange juice .
  • Orange-Habanero Mojo .
  • salt & freshly ground black pepper .
  • 1/2 habanero pepper, seeded & finely sliced .
  • 2 tbsps canola oil .
  • 1/4 c freshly squeezed orange juice .
  • 1 small red onion, finely sliced .
  • 1/2 c fresh lime juice .
  • 2 (1 1/2 lb) pork tenderloins .
  • 1/4 c Dijon mustard .
  • 1 tsp cumin seeds .
  • 4 garlic cloves, finely sliced .
  • salt & freshly ground black pepper .
  • 2 tbsps canola oil .
  • salt & freshly ground black pepper .
  • Guava Glaze

Directions
  • Step #1 Preheat a grill to high.
  • Step #2 Brush pork with oil, & then season it with salt & pepper.
  • Step #3 Set aside a few tbsps of the Guava Glaze for brushing the cooked pork.
  • Step #4 Grill for 4 to 5 mins per side, brushing frequently with the Guava Glaze.
  • Step #5 Remove from the grill, brush again with glaze & let rest for 10 mins.
  • Step #6 Slice into 1/2-inch thick slices, drizzle with the Orange-Habanero Mojo, & serve as soon as possible.
  • Step #7 Guava Glaze: Whisk jelly, mustard, & orange juice together in a small bowl.
  • Step #8 Spice up, to taste, with salt & pepper.
  • Step #9 Orange-Habanero Mojo: Heat oil in a small saucepan over medium-high heat.
  • Step #10 Add onion & garlic & cook, stirring, until soft, about 5 mins.
  • Step #11 Add lime juice, orange juice, & habanero chile & bring to a boil.
  • Step #12 Cook until reduced by half.
  • Step #13 Whisk in the cilantro & cumin & season, to taste, with salt & pepper.
  • Step #14 Drizzle over pork.
