Mexican Bean Salad Recipe

Ingredients
  • 1 (19 oz) can kidney beans or black beans .
  • 1/4 c vegetable oil .
  • 4 sliced seeded tomatoes .
  • 4 sliced green onions .
  • 1 (12 oz) can drained corn kernels .
  • 1 1/2 tsps chili powder .
  • 2 finely sliced seeded jalapenos .
  • 1 (19 oz) can chickpeas .
  • 2 choppped green peppers .
  • 1/4 c red wine vinegar .
  • 3/4 c sliced coriander .
  • 1 tsp dried oregano .
  • 2 tsps cumin .
  • 1/2 tsp salt

Directions
  • Step #1 Drain all beans & rinse with cold water.
  • Step #2 Mix together beans through to coriander.
  • Step #3 Whisk together red wine vinegar, cumin, chili powder, oregano & salt.
  • Step #4 Stir with salad.
  • Step #5 Can be served right away or kept in fridge up to 2 days.
