Indian-spiced Roast Salmon Recipe

Ingredients
  • 1/2 tsp ground ginger .
  • 2/3 c plain fat-free yogurt .
  • 1/4 tsp ground cumin .
  • 2 tbsps fresh lime juice .
  • 2 tbsps sliced fresh cilantro .
  • 4 (6 oz) salmon fillets (each fillet should weigh 6 oz & be about 1-inch thick) .
  • 1/8 tsp ground cinnamon .
  • 1/8 tsp cayenne pepper .
  • 1/2 tsp ground coriander .
  • 1/2 tsp salt

Directions
  • Step #1 Place salmon fillets, skin side down, in a roasting pan coated with cooking spray.
  • Step #2 Brush fillets evenly with lime juice.
  • Step #3 Mix together the salt & next 5 ingredients; sprinkle evenly over fish.
  • Step #4 Bake in a 425F degree oven for 10 mins or unitl fish flakes easily.
  • Step #5 Combine yogurt & cilantro; serve this with fish.
