Provolone And Roasted Pepper Crisps Recipe

Ingredients
  • 1/2 tsp kosher salt
  • 1 12-oz jar roasted red peppers, drained & cut into strips
  • 4 slices lemon
  • 1 c grated provolone
  • 1/2 tsp dried oregano
  • 1 tsp paprika
  • 1 clove garlic, sliced
  • 2 pitas, sliced in half to make 4 round pieces
  • 4 tbsps olive oil

Directions
  • Step #1 Heat broiler to high.
  • Step #2 Arrange the pitas on a baking sheet, cut-side up.
  • Step #3 Brush with 2 tbsps of the oil, oregano, then sprinkle with the paprika, & 1/4 tsp of the salt.
  • Step #4 Place under broiler to crisp, about 2 mins; set aside.
  • Step #5 Heat the remaining 2 tbsps of oil in a skillet.
  • Step #6 Add the peppers, lemon, garlic, & the remaining salt.
  • Step #7 Saute until the peppers are hot & fragrant, about 3 mins.
  • Step #8 Spread the peppers evenly over the pita halves & sprinkle with the provolone.
  • Step #9 Return to broiler & cook this until the provolone is melted, about 3 mins.
  • Step #10 Cut into strips, if desired.
  • Step #11 Tip: Almost any prepared vegetable from the deli counter can make a delicious substitute for the peppers.
  • Step #12 Try cured olives or marinated artichoke hearts or mushrooms.
