Spinach-and-artichoke Dip Recipe

Ingredients
  • 3 garlic cloves, crushed
  • 1 (8-oz) block fat-free cream cheese, softened
  • 2 c (8 oz) shredded part-skim mozzarella cheese, divided
  • 1/4 tsp black pepper
  • 1/4 c (1 oz) grated fresh Parmesan cheese, divided
  • 1 (14-oz) can artichoke hearts, drained & sliced
  • 1/2 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
  • 1 (8-oz) block 1/3-less-fat cream cheese, softened
  • 1 (13.5-oz) package baked tortilla chips (about 16 c)
  • 1/2 c fat-free sour cream

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine 1 1/2 c mozzarella, sour cream, & next 6 ingredients (2 tbsps Parmesan through spinach) In a large-ish bowl, 2 tbsps Parmesan, & stir until well-mixed.
  • Step #3 Spoon mixture into a 1 1/2-quart baking dish.
  • Step #4 Sprinkle top with 1/2 c mozzarella & 2 tbsps Parmesan.
  • Step #5 Bake at 350° for 30 mins or until bubbly & golden brown.
  • Step #6 Serve with tortilla chips.
