Tzatziki Recipe

Ingredients
  • 2 tbsps sliced fresh mint
  • 1 tbsp extravirgin olive oil
  • 1/4 tsp freshly ground black pepper
  • 3/4 tsp salt, divided
  • 1 1/2 c shredded English cucumber
  • 2 garlic cloves, minced
  • 1 (32-oz) carton plain fat-free yogurt

Directions
  • Step #1 Place a colander In a large-ish bowl.
  • Step #2 Line colander with 4 layers of cheesecloth, allowing cheesecloth to extend over outside edges.
  • Step #3 Spoon yogurt into colander.
  • Step #4 Cover up loosely with plastic wrap, & put in the fridge 12 hrs.
  • Step #5 Spoon drained yogurt into a bowl, & discard liquid.
  • Step #6 Cover up & put in the fridge drained yogurt.
  • Step #7 Place cucumber in colander; sprinkle with 1/2 tsp salt.
  • Step #8 Toss well to mix.
  • Step #9 Drain 15 mins.
  • Step #10 Place cucumber on paper towels; squeeze until barely moist.
  • Step #11 Combine drained yogurt, cucumber, pepper, mint, remaining 1/4 tsp salt, & garlic.
  • Step #12 Drizzle with oil.
