Fried Almond-crusted Jack Recipe

Ingredients
  • 1 baguette (8 oz.)
  • 1 tbsp olive oil
  • 1 large egg, beaten to mix
  • 3/4 c finely sliced almonds
  • 1 wedge (about 3/4 lb.) dry jack cheese
  • 1 tbsp salad oil
  •  About 3/4 c all-purpose flour

Directions
  • Step #1 Cut baguette into 1/2-inch-thick slices & lay in a single layer in a 10- by 15-inch pan.
  • Step #2 Bake in a 350º oven until golden, about 15 mins.
  • Step #3 Meanwhile, with a knife or vegetable peeler, cut off & discard dark coating on cheese.
  • Step #4 Set cheese wedge on a flat side & cut 6 to 8 triangles of equal thickness.
  • Step #5 Place flour, egg, & almonds on separate plates.
  • Step #6 Coat each cheese slice with flour, then egg, then almonds.
  • Step #7 Lay slices in a single layer.
  • Step #8 Set an 11- to 12-inch frying pan over med-heat/flame.
  • Step #9 When the pan is hot, add salad oil & olive oil.
  • Step #10 Lay the cheese slices in pan without crowding, & brown the slices on each side, 10 to 12 mins total.
  • Step #11 With a wide spatula, transfer browned cheese to warm plate.
  • Step #12 Spoon cheese onto toast slices & eat.
