Sweet-and-sour Green-tomato Salsa Recipe

Ingredients
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/3 c finely sliced sweet onion
  • 1 garlic clove, minced
  • 1 tsp brown sugar
  • 2 1/2 c sliced green tomato
  • 1 red bell pepper

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut the bell pepper in half lengthwise, discarding seeds & membranes.
  • Step #3 Place the pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #4 Broil for 10 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 10 mins.
  • Step #7 Peel & finely chop.
  • Step #8 Place the sliced green tomato, vinegar, sugar, & salt in a mixer or food processor/blender, & process until smooth.
  • Step #9 Place the tomato mixture in a small saucepan; cook over medium-high heat 5 mins or until liquid almost evaporates.
  • Step #10 Place in a small bowl; cool to about room temp.
  • Step #11 Add roasted pepper, onion, & garlic to tomato mixture; toss well.
