Red Pepper Hummus Recipe

Ingredients
  • 3 garlic cloves
  • 1/4 c water
  • 1 1/2 tsps salt
  • 2 (15-oz) cans chickpeas, rinsed & drained
  • 1/3 to 1/2 c fresh lime juice
  • 1/4 tsp ground red pepper
  • 1/2 c tahini
  • 1/2 c jarred roasted red bell peppers, drained
  • 1/2 tsp ground cumin
  • 2 tbsps olive oil
  •  Garnish: fresh flat-leaf parsley sprigs

Directions
  • Step #1 Process first 9 ingredients & 1/3 c lime juice in a food processor/blender or mixer until smooth, stopping to scrape down sides; add extra lime juice, if necessary, until desired consistency.
  • Step #2 Cover up & chill until ready to serve.
  • Step #3 Garnish, if desired.
