Poached Pepper-lime Oysters Recipe

Ingredients
  • 1/2 tsp salt
  • 1/2 c fresh lime juice (about 4 limes)
  • 7 tsps coarsely ground black pepper, divided
  • 4 c thinly sliced red onion
  • 3 (12-oz) containers standard oysters, undrained
  • 3 bay leaves
  • 1 tbsp olive oil
  • 1/2 c Champagne
  • 1/2 c white wine vinegar
  • 1/3 c sugar
  • 10 garlic cloves, minced

Directions
  • Step #1 Combine the onion, vinegar, sugar, & 1 tsp pepper in a medium bowl; marinate in refrigerator 1 hr.
  • Step #2 Drain the oysters in a colander over a bowl, reserving 1 c oyster liquid.
  • Step #3 Combine reserved oyster liquid, & Champagne In a large-ish saucepan, juice, & bring to a boil.
  • Step #4 Add oysters; reduce heat, & let simmer 4 mins or until the edges of oysters curl.
  • Step #5 Drain oysters in a colander over a bowl, reserving 1 c cooking liquid.
  • Step #6 Heat the oil In a large-ish nonstick skillet over medium-high heat.
  • Step #7 Add garlic; sauté for 1 min.
  • Step #8 Add 1 c reserved cooking liquid, salt, 6 tsps pepper, & bay leaves.
  • Step #9 Bring to a boil, & cook for 30 seconds.
  • Step #10 Remove from heat; cool.
  • Step #11 Combine oysters & cooking liquid; marinate in refrigerator 30 mins.
  • Step #12 Drain oysters; serve over onion mixture.
