Pork Tenderloin Appetizer Sandwiches Recipe

Ingredients
  • 1/4 c mayonnaise
  • 1/2 tsp cumin seeds
  • 1/2 c Burgundy or other dry red wine
  • 1/4 c spicy brown mustard
  • 1 (3/4-lb) pork tenderloin
  •  Cocktail rolls
  • 2 tbsps olive oil
  • 1/4 tsp pepper
  • 1/8 tsp ground cloves
  • 1/8 tsp garlic powder
  • 1 1/2 tbsps Worcestershire sauce
  • 3/4 tsp onion powder
  • 1 tsp dried thyme

Directions
  • Step #1 Place tenderloin in a heavy-duty, zip-top plastic bag.
  • Step #2 Combine wine & next 8 ingredients; pour over tenderloin.
  • Step #3 Seal bag; marinate in refrigerator 8 hrs, turning every once in awhile.
  • Step #4 Remove tenderloin from marinade, reserving marinade.
  • Step #5 Place tenderloin on a rack in a shallow roasting pan.
  • Step #6 Insert meat thermometer into thickest portion of tenderloin.
  • Step #7 Bake at 425° for 30 to 35 mins or until meat thermometer registers 160°, basting every once in awhile with marinade.
  • Step #8 Let meat stand 10 mins.
  • Step #9 Combine mayonnaise & mustard, stirring well.
  • Step #10 Cut tenderloin into 1/4" slices & serve this with mayonnaise mixture on cocktail rolls.
