Classic Gravlax Recipe

Ingredients
  • 2 c fresh dill sprigs
  • 1/3 c fine sea salt
  • 1 (1 1/2-lb) center-cut salmon fillet, unskinned & cut in half crosswise
  • 1/4 tsp whole white peppercorns, crushed
  • 1/3 c sugar
  • 2 tbsps grated lemon rind

Directions
  • Step #1 Combine first 4 ingredients.
  • Step #2 Sprinkle top one-third of salt mixture in bottom of an 8-inch square baking dish.
  • Step #3 Arrange 1 salmon half, skin side down, in dish.
  • Step #4 Sprinkle top with one-third salt mixture & dill.
  • Step #5 Top with remaining salmon half, skin side up.
  • Step #6 Spread remaining salt mixture over top of salmon.
  • Step #7 Cover up loosely with plastic wrap.
  • Step #8 Place a cast-iron skillet or other heavy object on top of salmon to weigh it down; put in the fridge 24 hrs.
  • Step #9 Remove skillet; set aside.
  • Step #10 Uncover salmon; carefully turn salmon stack over.
  • Step #11 Cover up loosely with plastic wrap.
  • Step #12 Place skillet on top of salmon, & put in the fridge 24 hrs.
  • Step #13 Remove skillet; set aside.
  • Step #14 Uncover salmon; carefully turn salmon stack over.
  • Step #15 Cover up loosely with plastic wrap.
  • Step #16 Place skillet on top of salmon, & put in the fridge 12 hrs.
  • Step #17 Scrape off & discard dill & salt mixture; discard liquid.
  • Step #18 Rinse salmon.
  • Step #19 Cut salmon into (1/8-inch-thick) slices.
  • Step #20 Discard skin.
