Red-and-green Bruschetta Recipe

Ingredients
  • 1 large red bell pepper
  •  Dried Tomato Pesto
  • 1/2 lb fresh mozzarella cheese, sliced
  • 1 French baguette
  • 8 cornichons, thinly sliced lengthwise*

Directions
  • Step #1 Cut baguette into 1/2-inch-thick slices; place on a baking sheet.
  • Step #2 Bake at 350° for 8 to 10 mins or until golden; cool.
  • Step #3 Place bell pepper on an aluminum foil wrap-lined baking sheet.
  • Step #4 Broil 5 inches from heat about 5 mins on each side or until pepper looks blistered.
  • Step #5 Place pepper in a heavy-duty zip-top plastic bag; seal & let this stand 10 mins to loosen skin.
  • Step #6 Peel pepper; discard seeds, & cut pepper into thin strips.
  • Step #7 Spread bread slices evenly with Dried Tomato Pesto.
  • Step #8 Top each with a mozzarella slice.
  • Step #9 Crisscross a pepper strip & pickle slice over cheese.
  • Step #10 Broil 5 inches from heat 2 to 3 mins or until cheese melts.
  • Step #11 Serve as soon as possible.
  • Step #12 * Substitute gherkin-style pickles for cornichons.
