Tunisian Sweet And Hot Pepper-tomato Relish Recipe

Ingredients
  • 3 (6-inch) pitas, each split & cut into 4 wedges
  • 1 tsp ground cumin
  • 1/4 c sliced fresh flat-leaf parsley
  • 3 large red bell peppers
  • 1/8 tsp freshly ground black pepper
  • 2 tbsps fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp grated lemon rind
  • 1 tbsp extravirgin olive oil
  • 1/4 tsp salt
  • 1 tbsp commercial harissa or hot pepper sauce (such as Tabasco)
  • 1 3/4 c sliced seeded peeled tomato
  • 1 tsp sugar

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut bell peppers in half lengthwise; discard seeds & membranes.
  • Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #4 Broil 15 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 15 mins.
  • Step #7 Peel & cut into 1/2-inch pieces; place this In a large-ish bowl.
  • Step #8 Heat a medium, heavy skillet over high heat.
  • Step #9 Add tomato; cook 8 mins or until thick, stirring constantly.
  • Step #10 Add tomato to bell pepper in bowl.
  • Step #11 Stir in parsley & next 9 ingredients (through garlic).
  • Step #12 Serve with pita wedges.
