Beet Napoleons Recipe

Ingredients
  • 1 1/2 lbs small red and/or yellow beets
  • 1/8 tsp black pepper
  • 1/4 c Chive Puree (optional)
  • 1/8 tsp kosher salt
  • 6 oz goat cheese, at about room temp
  • 1/4 c finely sliced fresh chives

Directions
  • Step #1 Heat the oven to 400° F.
  • Step #2 Place 3 of the beets on a large sheet of foil wrap & wrap tightly.
  • Step #3 Repeat with the remaining beets.
  • Step #4 Roast until tender, about 1 hr.
  • Step #5 Let cool for about 10 mins.
  • Step #6 Using a small knife, peel each beet & trim the ends.
  • Step #7 Place a piece of parchment or plastic wrap on a cutting board.
  • Step #8 Slice the beets 1/8 to 1/4 inch thick; set aside to cool completely.
  • Step #9 Meanwhile, chives, in a small bowl mix the goat cheese, salt, & pepper.
  • Step #10 To assemble, place 1 beet slice on a platter.
  • Step #11 Spread 1/2 tsp of the cheese mixture over the beet.
  • Step #12 Top with another slice; repeat with one more slice of beet & 1 more tsp of the cheese mixture.
  • Step #13 You should have a stack of three slices of beet with some cheese mixture in between each slice.
  • Step #14 Repeat with the remaining beets & cheese mixture.
  • Step #15 Arrange the napoleons on a platter & drizzle with the chive puree.
  • Step #16 Serve as soon as possible.
  • Step #17 Tip: To check a beet for doneness, insert the tip of a knife or the tines of a fork into the center.
  • Step #18 If there is no resistance, the beet is done.
