Herbed Portobello Mushrooms With Mascarpone Recipe

Ingredients
  • 8 large fresh portobello mushroom caps
  •  Garnish: Fresh basil sprig
  • 1 tbsp minced fresh oregano
  • 1 1/2 tbsps fresh lemon juice
  • 1/3 c low-sodium, fat-free chicken broth
  • 2 garlic cloves, minced
  • 1/4 tsp freshly ground pepper
  • 1/2 c (4 oz) mascarpone cheese
  • 1 tbsp minced fresh basil

Directions
  • Step #1 Coat mushrooms with vegetable cooking spray; set aside.
  • Step #2 Stir together lemon juice & garlic in a small saucepan; cook over med-heat/flame 1 to 2 mins.
  • Step #3 Stir in broth & next 3 ingredients; bring to a boil.
  • Step #4 Remove from heat.
  • Step #5 Brush mushrooms with herb mixture, applying generously to the underside.
  • Step #6 Divide mascarpone into 8 portions, & roll this into balls.
  • Step #7 Grill mushrooms, top side up, covered with grill lid, over high heat (400º to 500º) 5 to 7 mins.
  • Step #8 Turn mushrooms, & top each with a cheese ball.
  • Step #9 Grill, covered with grill lid, 5 mins.
  • Step #10 Garnish with basil sprig, if desired.
  • Step #11 Serve as soon as possible.
