Hot Cape Cod Dip Recipe

Ingredients
  • 1/4 tsp Worcestershire sauce
  • 1/2 c whipping cream
  • 1/4 tsp freshly ground pepper
  • 2 shallots, minced
  • 1 tbsp all-purpose flour
  • 1/2 tsp ground white pepper
  •  Garnish: sliced fresh parsley
  • 1 (1-lb) cod fillet
  • 3 tbsps butter or margarine, melted
  • 1 tbsp fresh lemon juice
  • 3/4 tsp salt
  • 2 tbsps dry sherry
  • 3/4 c milk

Directions
  • Step #1 Fish in a Flash: Pour water to a depth of 2 inches into a large skillet; bring to a boil.
  • Step #2 Add fish, & return to a boil.
  • Step #3 Cover up, reduce heat.
  • Step #4 & let simmer 5 to 8 mins or until fish flakes with a fork.
  • Step #5 Remove from skillet with a slotted spoon; cool slightly.
  • Step #6 Flake into bite-size pieces.
  • Step #7 Sauté shallots in butter in a heavy saucepan over medium-high heat 3 mins or until tender; whisk in flour until smooth.
  • Step #8 Cook 1 min, whisking constantly.
  • Step #9 Gradually whisk in milk; cook over med-heat/flame, whisking constantly, until mixture is thickened & bubbly.
  • Step #10 Stir in whipping cream & next 6 ingredients.
  • Step #11 Add fish; cook over low heat/flame until thoroughly heated.
  • Step #12 Serve in a chafing dish; garnish, if desired.
  • Step #13 Serve warm.
  • Step #14 Note: Double recipe to fill chafing dish.
