Cowboy Caviar Recipe

Ingredients
  • 1 can (15 oz.) black-eyed peas
  • 2 tbsps red wine vinegar
  • 2/3 c sliced fresh cilantro
  • 2/3 c thinly sliced green onions
  • 1 firm-ripe avocado (about 10 oz.)
  • 1 can (11 oz.) corn kernels
  •  Salt
  • 1 1/2 tsps salad oil
  • 1 bag (6 oz.) tortilla chips or 2 c finely shredded cabbage
  • 1 1/2 to 2 tsps hot sauce
  • 1/2 lb Roma tomatoes, coarsely sliced
  • 1/8 tsp pepper
  • 1 clove garlic, minced

Directions
  • Step #1 In a large bowl, mix vinegar, hot sauce, oil, garlic, & pepper.
  • Step #2 Peel, pit, & cut avocado into 1/2-inch cubes.
  • Step #3 Add to vinegar mixture & mix carefully to coat.
  • Step #4 Drain & rinse peas & corn.
  • Step #5 Add peas, corn, cilantro, onions, & tomatoes to avocado; mix carefully to coat.
  • Step #6 Add salt to taste.
  • Step #7 Serve pea mixture with chips as an appetizer, or add cabbage & mix to make a salad.
  • Step #8 Nutritional analysis per appetizer serving.
