Grapefruit-cranberry Marmalade Recipe

Ingredients
  • 2 1/2 c fresh cranberries
  • 4 medium grapefruit (about 4 lbs)
  • 1 1/2 c water
  • 3 c sugar

Directions
  • Step #1 Using a vegetable peeler, carefully remove rind from grapefruit; discard bitter white pith.
  • Step #2 Cut rind into julienne strips.
  • Step #3 Peel & section grapefruit; set sections aside.
  • Step #4 Combine grapefruit rind, sections, & water In a large-ish saucepan; bring to a boil.
  • Step #5 Reduce heat to medium, & let simmer 15 mins, stirring every once in awhile.
  • Step #6 Add cranberries, & cook 10 mins.
  • Step #7 Stir in sugar; cook 30 mins or until slightly thickened, stirring every once in awhile.
  • Step #8 Pour into decorative jars or airtight containers.
  • Step #9 Store in refrigerator for up to 3 weeks.
