Ingredients
2 1/2 c fresh cranberries
4 medium grapefruit (about 4 lbs)
1 1/2 c water
3 c sugar
Directions
Step #1 Using a vegetable peeler, carefully remove rind from grapefruit; discard bitter white pith.
Step #2 Cut rind into julienne strips.
Step #3 Peel & section grapefruit; set sections aside.
Step #4 Combine grapefruit rind, sections, & water In a large-ish saucepan; bring to a boil.
Step #5 Reduce heat to medium, & let simmer 15 mins, stirring every once in awhile.
Step #6 Add cranberries, & cook 10 mins.
Step #7 Stir in sugar; cook 30 mins or until slightly thickened, stirring every once in awhile.
Step #8 Pour into decorative jars or airtight containers.
Step #9 Store in refrigerator for up to 3 weeks.
