Mushroom And Parmigiano Bruschetta Recipe

Ingredients
  • 1/4 tsp crushed red pepper
  • 1/2 tsp sugar
  • 2 tsps butter
  • 2 tbsps sherry vinegar or red wine vinegar
  • 1/3 c sliced cremini mushrooms
  • 1 garlic clove, minced
  • 1/2 c sliced seeded plum tomato
  • 1/8 tsp salt
  • 1/4 c sliced green onions
  • 8 (1/2-inch-thick) slices diagonally cut French bread baguette, toasted
  • 1/4 c (1 oz) shaved Parmigiano-Reggiano cheese
  • 10 thinly sliced basil leaves
  • 1 tsp capers
  • 1/3 c sliced shiitake mushroom caps
  • 1/3 c sliced baby portobello mushroom caps

Directions
  • Step #1 Combine first 7 ingredients in a medium bowl; set aside.
  • Step #2 Melt butter in a medium nonstick skillet over med-heat/flame.
  • Step #3 Add mushrooms, & garlic; cook 5 mins or until tender, onions, stirring frequently.
  • Step #4 Add mushroom mixture to tomato mixture; toss well to mix.
  • Step #5 Spoon about 1 tbsp mushroom mixture onto each bread slice.
  • Step #6 Sprinkle top evenly with cheese.
  • Step #7 Serve as soon as possible.
