Ingredients
1/4 tsp crushed red pepper
1/2 tsp sugar
2 tsps butter
2 tbsps sherry vinegar or red wine vinegar
1/3 c sliced cremini mushrooms
1 garlic clove, minced
1/2 c sliced seeded plum tomato
1/8 tsp salt
1/4 c sliced green onions
8 (1/2-inch-thick) slices diagonally cut French bread baguette, toasted
1/4 c (1 oz) shaved Parmigiano-Reggiano cheese
10 thinly sliced basil leaves
1 tsp capers
1/3 c sliced shiitake mushroom caps
1/3 c sliced baby portobello mushroom caps
Directions
Step #1 Combine first 7 ingredients in a medium bowl; set aside.
Step #2 Melt butter in a medium nonstick skillet over med-heat/flame.
Step #3 Add mushrooms, & garlic; cook 5 mins or until tender, onions, stirring frequently.
Step #4 Add mushroom mixture to tomato mixture; toss well to mix.
Step #5 Spoon about 1 tbsp mushroom mixture onto each bread slice.
Step #6 Sprinkle top evenly with cheese.
Step #7 Serve as soon as possible.
