Mediterranean Rollups Recipe

Ingredients
  • 1 (16-oz) can chickpeas, drained
  • 1/3 c olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsps thinly sliced fresh mint
  • 1/4 tsp paprika
  • 3 medium tomatoes
  • 4 (8-inch) flour tortillas
  • 6 oz feta cheese, crumbled
  • 1/4 c lemon juice
  • 1 tsp salt
  • 6 garlic cloves
  • 1/4 c tahini

Directions
  • Step #1 Seed & dice tomatoes; sprinkle with 1 tsp salt.
  • Step #2 Let stand 1 hr in a wire-mesh strainer.
  • Step #3 Process chickpeas & next 5 ingredients in a food processor/blender until smooth.
  • Step #4 Spread mixture evenly over tortillas.
  • Step #5 Sprinkle top with tomato, feta, & next 3 ingredients; roll up.
  • Step #6 Chill 30 mins.
  • Step #7 Cut each roll diagonally into 1-inch slices.
