Chocolate Caramel Pears Recipe

Ingredients
  • 6 large ripe firm pears (Bosc, Bartlett, D'Anjou)
  • 1 (14 oz) package caramels*
  • 1/3 c vanilla or white chips
  • 2 tbsps water
  • 1/3 c semisweet chocolate chips
  • 1 c sliced cashews, hazelnuts or almonds
  • 1 1/2 tsps shortening

Directions
  • Step #1 In a heavy saucepan, heat caramels & water over low heat/flame just until caramels are melted.
  • Step #2 Remove from the heat; cool slightly.
  • Step #3 Cut a thin slice from the bottom of each pear so it sits flat.
  • Step #4 Dip pears halfway in caramel; tun to coat & allow excess to drip off.
  • Step #5 Dip in nuts & place on a greased baking sheet; put in the fridge for 30 mins or until coating is firm.
  • Step #6 In a heavy saucepan or microwave, melt chocolate chips with 1 tsp shortening; stir until smooth.
  • Step #7 In another saucepan, melt vanilla chips with remaining shortening; stir until smooth.
  • Step #8 Drizzle melted chips over pears & stems.
  • Step #9 Let stand until set.
