Ingredients
1/2 c ketchup
1/4 tsp salt
1 tbsp olive oil
1/2 c sliced onion
3/4 c fresh lime juice, divided
1 lb medium shrimp
2 tbsps Mexican hot sauce (such as Tamazula)
1 c sliced peeled cucumber
6 c water
1/3 c sliced fresh cilantro
Directions
Step #1 Place sliced onion in a colander, & rinse with cold water.
Step #2 Drain.
Step #3 Bring 6 c water & 1/4 c juice to a boil in a Dutch oven.
Step #4 Add shrimp; cook 3 mins or until done.
Step #5 Drain & rinse with cold water; peel shrimp.
Step #6 Combine shrimp & 1/2 c juice In a large-ish bowl; cover & chill 1 hr.
Step #7 Stir in onion, cucumber, & remaining ingredients.
Step #8 Serve as soon as possible or chilled.
