Ceviche De Camaron (shrimp Ceviche Cocktail) Recipe

Ingredients
  • 1/2 c ketchup
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • 1/2 c sliced onion
  • 3/4 c fresh lime juice, divided
  • 1 lb medium shrimp
  • 2 tbsps Mexican hot sauce (such as Tamazula)
  • 1 c sliced peeled cucumber
  • 6 c water
  • 1/3 c sliced fresh cilantro

Directions
  • Step #1 Place sliced onion in a colander, & rinse with cold water.
  • Step #2 Drain.
  • Step #3 Bring 6 c water & 1/4 c juice to a boil in a Dutch oven.
  • Step #4 Add shrimp; cook 3 mins or until done.
  • Step #5 Drain & rinse with cold water; peel shrimp.
  • Step #6 Combine shrimp & 1/2 c juice In a large-ish bowl; cover & chill 1 hr.
  • Step #7 Stir in onion, cucumber, & remaining ingredients.
  • Step #8 Serve as soon as possible or chilled.
