Creamy Potato-garlic Spread Recipe

Ingredients
  • 1 lb baking potatoes, peeled & cut into 2-inch cubes
  • 1 tbsp olive oil
  • 1/2 tsp freshly ground pepper
  • 1/2 to 1 tsp grated lemon rind
  • 1/2 tsp salt
  • 1 tsp bottled minced roasted garlic
  • 3 tbsps fresh lemon juice
  • 1 green onion, sliced (optional)

Directions
  • Step #1 Cook potatoes in boiling water to cover in a Dutch oven 15 mins or until tender.
  • Step #2 Drain.
  • Step #3 Process potatoes, & next 5 ingredients in a food processor/blender until smooth, juice, stopping to scrape down sides.
  • Step #4 Transfer mixture to a serving dish, & sprinkle with onions, if desired.
  • Step #5 To make your own pita chips, cut 2 (6-inch) pita rounds into wedges; spit in half at seams.
  • Step #6 Place on a baking sheet coated with vegetable cooking spray; coat wedges with cooking spray.
  • Step #7 Bake at 450º for 4 to 5 mins or until crisp.
