Ingredients
1 lb bay scallops
1/2 lb bacon
Vinaigrette dressing
3/4 tsp salt
Garnish: plum tomato slices, fresh chives, & chive blossoms
1/4 tsp pepper
1 c cornmeal
Mixed salad greens
Directions
Step #1 Combine cornmeal, & pepper In a large-ish zip-top plastic bag; add scallops, salt, & seal.
Step #2 Shake to coat; set aside.
Step #3 Cook bacon In a large-ish skillet until crisp; remove bacon, & drain on paper towels, reserving drippings in skillet.
Step #4 Crumble bacon; set aside.
Step #5 Heat drippings over medium-high heat; add one-third of scallops, & cook 1 1/2 to 2 mins on each side or until browned.
Step #6 Repeat procedure with remaining scallops.
Step #7 Drain on paper towels.
Step #8 Serve with mixed greens; sprinkle with crumbled bacon.
Step #9 Serve with dressing.
