Tashmoo Scallops Recipe

Ingredients
  • 1 lb bay scallops
  • 1/2 lb bacon
  •  Vinaigrette dressing
  • 3/4 tsp salt
  •  Garnish: plum tomato slices, fresh chives, & chive blossoms
  • 1/4 tsp pepper
  • 1 c cornmeal
  •  Mixed salad greens

Directions
  • Step #1 Combine cornmeal, & pepper In a large-ish zip-top plastic bag; add scallops, salt, & seal.
  • Step #2 Shake to coat; set aside.
  • Step #3 Cook bacon In a large-ish skillet until crisp; remove bacon, & drain on paper towels, reserving drippings in skillet.
  • Step #4 Crumble bacon; set aside.
  • Step #5 Heat drippings over medium-high heat; add one-third of scallops, & cook 1 1/2 to 2 mins on each side or until browned.
  • Step #6 Repeat procedure with remaining scallops.
  • Step #7 Drain on paper towels.
  • Step #8 Serve with mixed greens; sprinkle with crumbled bacon.
  • Step #9 Serve with dressing.
