Tomatillo Purée Recipe

Ingredients
  • 3 tbsps sliced fresh cilantro
  • 1 1/4 lbs tomatillos (12 large)
  • 1/4 tsp salt
  • 8 c water

Directions
  • Step #1 Discard the husks & stems from the tomatillos.
  • Step #2 Bring water to a boil in a Dutch oven.
  • Step #3 Add tomatillos; cover & remove this from heat.
  • Step #4 Let stand 5 mins or until tender; drain.
  • Step #5 Place tomatillos in a mixer; process until smooth.
  • Step #6 Stir in cilantro & salt.
  • Step #7 Cover up & chill in the fridge.
  • Step #8 Note: Substitute 4 (11-oz) cans tomatillos if you can't find them fresh.
  • Step #9 drain the canned tomatillos,and purée with cilantro.
  • Step #10 Omit the salt; canned tomatillos contain added sodium.
