Modern Cheese Balls Recipe

Ingredients
  • 1/2 tsp whole fennel seeds
  • 1/4 c granola
  • 1/4 c ground gingersnaps (about 5 cookies)
  • 1/4 c wasabi-coated green peas
  • 1/4 c finely grated Parmesan
  • 2 11-oz logs goat cheese

Directions
  • Step #1 Grind the peas in a food processor/blender or crush them in a resealable plastic bag.
  • Step #2 Spread the crumbs on a plate.
  • Step #3 Repeat these steps for the granola, then the gingersnaps.
  • Step #4 Combine the Parmesan & fennel on another plate.
  • Step #5 Shape the cheese into balls, working with about 1 rounded tbsp at a time.
  • Step #6 Roll the balls in the coatings.
  • Step #7 In Advance: Roll the cheese into balls & put in the fridge them, uncoated, for up to 24 hrs.
  • Step #8 Roll the balls in the coatings no more than 1 hr before the party.
