Asian Beef-crepe Rolls Recipe

Ingredients
  • 1 tsp sugar
  • 2 tsps sugar
  •  Remaining ingredients:
  • 30 mint leaves
  • 2 tsps fish sauce
  • 1/2 tsp chile paste or crushed red pepper
  • 1 tbsp fresh lime juice
  • 1 tbsp minced peeled fresh ginger
  • 10 small Boston lettuce leaves
  • 2 oz uncooked rice sticks (rice flour noodles)
  • 1/2 c shredded carrot
  • 1 (12-oz) flank steak
  • 10 Basic Crepes
  •  Marinade:
  • 1 1/2 tbsps fish sauce
  •  Dipping sauce:
  • 1/4 c chunky peanut butter
  • 30 thinly cut slices seeded cucumber
  • 30 cilantro sprigs
  • 1 tsp vegetable oil
  • 2 tbsps water
  • 3 tbsps fresh lime juice

Directions
  • Step #1 To prepare marinade, mix first 3 ingredients In a large-ish zip-top plastic bag.
  • Step #2 Trim fat from steak.
  • Step #3 Cut steak diagonally across grain into thin slices.
  • Step #4 Add steak to bag; seal & marinate in refrigerator 2 hrs.
  • Step #5 Remove steak from bag, & discard marinade.
  • Step #6 To prepare dipping sauce, mix peanut butter & the next 4 ingredients (peanut butter through 1 tsp sugar) in a small bowl; stir with a whisk until mixed.
  • Step #7 Set aside.
  • Step #8 Place rice sticks in a medium saucepan; cover with hot water.
  • Step #9 Let stand 30 mins.
  • Step #10 Bring to a boil, & cook 5 mins.
  • Step #11 Drain; cut rice sticks into small pieces.
  • Step #12 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #13 Add beef; stir-fry 2 mins.
  • Step #14 Add rice sticks; cook 1 min.
  • Step #15 Stir in 1 tbsp lime juice & chile paste.
  • Step #16 Remove from heat.
  • Step #17 Place 1 lettuce leaf in the center of 1 crepe, 3 cucumber slices, about 1 tbsp carrot, & top this with 1/4 c beef mixture, 3 mint leaves, & 3 cilantro sprigs.
  • Step #18 Fold in bottom of crepe, & roll up jelly-roll fashion starting at side.
  • Step #19 Repeat the procedure with remaining lettuce, beef mixture, carrot, crepes, mint, cucumber, & cilantro.
  • Step #20 Cut each roll crosswise into 3 slices; arrange, cut sides up, on a plate.
  • Step #21 Serve with dipping sauce.
