California Crepe Rolls Recipe

Ingredients
  • 2 tbsps rice vinegar
  • 30 medium shrimp, cooked & peeled
  • 1 c uncooked short-grain rice
  • 1 1/2 tbsps sugar
  • 20 small spinach leaves
  • 20 (1/8-inch-thick) slices peeled avocado (about 1 avocado)
  • 1 3/4 c water
  • 1/4 c water, divided
  • 10 Basic Crepes
  • 1/4 tsp salt
  • 3 tbsps low-sodium soy sauce
  • 5 tsps sesame seeds, toasted
  • 1 tbsp wasabi powder

Directions
  • Step #1 Bring first 4 ingredients to a boil in a medium saucepan.
  • Step #2 Add rice; cover, reduce heat, & let simmer 20 mins or until liquid is absorbed.
  • Step #3 Cool slightly (rice will be sticky).
  • Step #4 Combine 2 tbsps water & soy sauce in a small bowl.
  • Step #5 Combine 2 tbsps water & wasabi powder in a small bowl.
  • Step #6 Gently spread about 1/4 c rice mixture over 1 crepe using moist fingertips.
  • Step #7 Place 2 spinach leaves on lower third of crepe.
  • Step #8 Arrange 3 shrimp & 2 avocado slices over spinach.
  • Step #9 Sprinkle top with 1/2 tsp sesame seeds.
  • Step #10 Roll up crepe jelly-roll fashion, pressing seam to seal.
  • Step #11 Cut roll crosswise into 4 slices.
  • Step #12 Repeat procedure with the remaining crepes, spinach, avocado slices, rice mixture, shrimp, & sesame seeds.
  • Step #13 Serve with soy sauce mixture & wasabi sauce.
