Shredded Beef With Tomatillo Sauce Recipe

Ingredients
  • 1/4 large onion, quartered
  • 1 tbsp salt
  • 1 c sliced onion
  • 6 oz skirt steak
  • 1 bay leaf
  • 2 tbsps fresh cilantro leaves
  • 1 large garlic clove, crushed
  • 1 tbsp canola oil
  • 1/4 tsp salt
  • 1 lb (about 8 large) tomatillos, husks removed & tomatillos quartered
  • 2 large garlic cloves, minced
  • 1 serrano chile, coarsley sliced

Directions
  • Step #1 Heat oil In a large-ish skillet over medium-high heat.
  • Step #2 Add tomatillos & next 3 ingredients; sauté 7 mins or until lightly browned.
  • Step #3 Pulse tomatillo mixture, cilantro, & 1/4 tsp salt in a food processor/blender until coarsely sliced.
  • Step #4 Transfer to a medium bowl.
  • Step #5 Set aside.
  • Step #6 Combine skirt steak, remaining 4 ingredients, & water to cover In a large-ish saucepan.
  • Step #7 Bring to a boil; cover, reduce heat, & let simmer 1 hr & 45 mins or until meat is tender.
  • Step #8 Remove steak to a medium bowl, discarding onion & seasonings.
  • Step #9 When cool enough to handle, shred meat.
  • Step #10 Stir in tomatillo sauce.
  • Step #11 Serve with fresh sopes.
  • Step #12 Tip: You may substitute flank steak for skirt steak.
  • Step #13 Cook 2 1/2 hrs or until tender.
