Tomato-glazed Chicken Wings Recipe

Ingredients
  • 1/4 c plus 1 tbsp extra-virgin olive oil
  •  Sea salt & freshly ground pepper
  • 4 lbs chicken wings, tips discarded, wings cut in half at the joint
  • 1 lb plum tomatoes, halved lengthwise
  • 2 oz mild goat cheese

Directions
  • Step #1 Preheat the oven to 425°.
  • Step #2 In a large bowl, toss the chicken wings with 2 tbsps of the oil & a generous pinch each of salt & pepper.
  • Step #3 Arrange the chicken wings in a single layer on a large nonstick baking sheet & bake for about 40 mins, or until golden & crusty.
  • Step #4 Carefully pour off the fat from the baking sheet.
  • Step #5 Meanwhile, cut side up, arrange the tomatoes, In a large-ish baking dish & drizzle evenly with 1 tbsp of the oil.
  • Step #6 Spice up the tomatoes with salt & pepper & roast for 20 mins, or until softened & lightly browned on the bottom.
  • Step #7 Transfer the tomatoes & their juices to a mixer or food processor/blender & pulse several times until smooth.
  • Step #8 Add the goat cheese & the remaining 2 tbsps of oil & process until smooth.
  • Step #9 Spice up the sauce with salt & pepper.
  • Step #10 Preheat the broiler.
  • Step #11 Transfer the chicken wings to a large bowl & toss with half the tomato sauce.
  • Step #12 Spread the wings in a single layer on the baking sheet & broil for 5 mins, rotating the pan as necessary, until evenly browned & crisp.
  • Step #13 Transfer the hot chicken wings to a serving platter.
  • Step #14 Pour the remaining tomato sauce into a bowl & pass at the table for dipping.
  • Step #15 Make Ahead: The recipe can be prepared through Step 2 & put in the fridged overnight.
  • Step #16 Rewarm the chicken wings in the oven before broiling.
