Coconut Tofu Keema Recipe

Ingredients
  • 1 (14 oz) package extra firm tofu, sliced
  • 1 tbsp ground cumin
  • 1 medium onions, minced
  • 1 (16 oz) can coconut milk
  • 4 cloves garlic, pressed
  • 1 1/2 tsps ground ginger
  • 1 1/2 c frozen peas, thawed
  • 1 1/2 c sliced carrot
  • 1 tsp curry powder
  • 1 tbsp red pepper paste
  • 1/4 c olive oil
  • 6 c tomato sauce
  • 1 tsp salt

Directions
  • Step #1 Heat olive oil in a large saucepan over med-heat/flame.
  • Step #2 Stir in garlic, & cook, onion, & tofu; cover, stirring every once in awhile for 5 to 10 mins.
  • Step #3 Stir in coconut milk, ginger, cumin, curry powder, salt, & red pepper paste; bring to a simmer.
  • Step #4 Stir in tomato sauce, peas, & carrots; simmer, covered, about 30 mins.
