Tomato And Bean Bruschetta Recipe

Ingredients
  • 1/2 tsp salt
  • 1/4 c thinly sliced fresh basil
  •  Cooking spray
  • 4 oz country white bread, diagonally sliced into 8 (1/4-inch) pieces & toasted
  • 1 garlic clove, minced
  • 1 c cooked cannellini beans
  •  Dash of crushed red pepper
  • 1 c sliced seeded peeled plum tomato
  • 4 tsps extravirgin olive oil

Directions
  • Step #1 Heat a large nonstick skillet over med-heat/flame.
  • Step #2 Coat pan with cooking spray.
  • Step #3 Add tomato & garlic; cook 2 mins, stirring constantly.
  • Step #4 Add cannellini beans, salt, & red pepper to pan, mashing beans with a fork.
  • Step #5 Cook 1 min or until thoroughly heated.
  • Step #6 Remove from heat.
  • Step #7 Spread bean mixture evenly over each bread slice; drizzle each slice with 1/2 tsp extravirgin olive oil, & then top each with 1 1/2 tsps basil.
