Spiced Red Lentil Dip With Pita Crisps Recipe

Ingredients
  • 4 (6-inch) pitas, each cut into 5 wedges
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 3 tbsps fresh lemon juice
  •  Pita Crisps:
  • 1 c finely sliced onion
  • 1/2 tsp ground cumin
  • 1 c dried small red lentils
  •  Cooking spray
  • 1/2 tsp ground caraway seeds
  • 1 bay leaf
  • 3 garlic cloves, minced
  •  Dip:
  • 1/8 tsp fine sea salt
  • 1 tsp ground coriander seeds
  • 1 tsp fine sea salt
  • 1/8 tsp freshly ground black pepper
  • 2 tbsps pine nuts
  • 1/8 tsp ground red pepper

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 To prepare dip, place lentils & bay leaf In a large-ish saucepan; cover with water to 2 inches above lentils.
  • Step #3 Bring to a boil.
  • Step #4 Cover up, reduce heat, & let simmer 8 mins or until tender.
  • Step #5 Drain well.
  • Step #6 Discard bay leaf.
  • Step #7 Heat oil in a small nonstick skillet over medium-high heat.
  • Step #8 Add onion & nuts; saute 5 mins or until nuts are lightly browned.
  • Step #9 Stir in tomato paste & next 6 ingredients (tomato paste through garlic); cook 5 mins, stirring every once in awhile.
  • Step #10 Stir in juice.
  • Step #11 Combine lentils & onion mixture in a food processor/blender; process until smooth.
  • Step #12 To prepare pita crisps, coat 1 side of each pita wedge with cooking spray; sprinkle wedges evenly with 1/8 tsp salt & black pepper.
  • Step #13 Arrange wedges in a single layer on a baking sheet.
  • Step #14 Bake at 350° for 20 mins or until golden.
