Avocado-corn Dip With Homemade Tortilla Chips Recipe

Ingredients
  • 12 (10-inch) flour tortillas
  •  Peanut oil
  • 1/3 c firmly packed dark brown sugar
  • 1 tsp freshly ground black pepper
  • 2 2/3 c frozen whole kernel corn
  • 1/3 c hot sauce*
  • 2 1/2 tsps ground cumin
  • 3/4 tsp salt
  •  Garnishes: fresh cilantro, sliced tomato, lime wedge
  • 8 ripe avocados, peeled & sliced
  • 1/2 c fresh lime juice
  •  Salt

Directions
  • Step #1 Mash avocados In a large-ish bowl to desired consistency.
  • Step #2 Stir in corn & next 6 ingredients.
  • Step #3 Cover up & chill in the fridge.
  • Step #4 Pour oil to a depth of 1/2 inch In a large-ish skillet; heat to 350º.
  • Step #5 Stack tortillas; cut stack into 12 wedges.
  • Step #6 Fry wedges, 1 stack of 12 at a time, in hot oil 1 1/2 mins on each side or until lightly browned.
  • Step #7 Quickly remove tortilla chips from oil; drain on paper towels, & sprinkle lightly with salt.
  • Step #8 Serve chips with dip.
  • Step #9 Garnish, if desired.
