1/3 c coarsely sliced fresh cilantro, plus leaves & tender stems from 24 sprigs
2 tbsps orange marmalade
3 tbsps lemon juice
1/4 c orange juice
Vegetable oil for frying
3 tbsps finely sliced green onion
24 square wonton wrappers
24 large shell-on shrimp (20 to 24 per lb.)
2 tbsps toasted sesame oil
1 tbsp lemon zest
2 tbsps plus 2 tsp. minced fresh ginger
1 c low-sodium soy sauce
Directions
Step #1 In a large bowl, whisk together 1/2 c soy sauce, sliced cilantro, lemon zest, 2 tbsp.
Step #2 ginger, & 1 tbsp.
Step #3 sesame oil.
Step #4 Peel shrimp, leaving tails on, & devein.
Step #5 Add to soy mixture & marinate, covered, 15 to 20 mins at about room temp.
Step #6 Drain shrimp in a colander, spread out on paper towels, & pat dry.
Step #7 Pour oil into a deep, heavy pot to a depth of 3 in.
Step #8 & heat to 375°.
Step #9 Meanwhile, spread out wonton wrappers.
Step #10 Working with one wrapper at a time, put several cilantro leaves & stems along wrapper edge nearest you.
Step #11 Top them with a shrimp, arranging shrimp lengthwise so that tail extends beyond wrapper.
Step #12 Fold the wrapper edge opposite the tail over shrimp.
Step #13 Brush far edge of wrapper with water and, starting with near edge, roll wrapper loosely around shrimp, forming a package.
Step #14 Press seam firmly to seal.
Step #15 Preheat oven to 200° & put a shallow rack in a baking pan.
Step #16 When oil reaches 375°, until medium golden brown, flipping midway through cooking, fry wontons in several batches so as not to crowd them, 1 1/2 to 2 mins.
Step #17 Lift shrimp out with tongs, draining excess oil, & transfer to baking pan; keep warm in oven.
Step #18 In a small bowl, whisk together 1/2 c soy sauce, 1 tbsp.
Step #19 sesame oil, green onion, the orange & lemon juices, marmalade, & 2 tsp.
Step #20 ginger.
Step #21 Serve wontons hot, with dipping sauce on the side.
