Avocado-mango Salsa With Roasted Corn Chips Recipe

Ingredients
  •  Fresh cilantro sprigs (optional)
  • 1 1/4 c sliced peeled avocado
  • 1 tbsp finely sliced fresh cilantro
  • 1/4 tsp kosher salt, divided
  • 12 (6-inch) corn tortillas, each cut into 6 wedges
  •  Cooking spray
  • 4 tsps fresh lime juice
  • 1 c sliced peeled mango

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Arrange tortilla wedges in a single layer on baking sheets coated with cooking spray.
  • Step #3 Coat wedges with cooking spray; sprinkle 1/8 tsp salt evenly over wedges.
  • Step #4 Bake at 425° for 8 mins or until crisp.
  • Step #5 Combine remaining 1/8 tsp salt, sliced cilantro, mango, & juice, avocado, tossing carefully.
  • Step #6 Garnish with cilantro sprigs, if desired.
  • Step #7 Let stand 10 mins.
  • Step #8 Serve with chips.
