Chicken-bacon Nuggets Recipe

Ingredients
  • 2 tbsps sesame oil
  • 8 bacon slices, cut into thirds
  • 1 tsp ground ginger
  • 1 garlic clove, minced
  • 2 large skinned & boned chicken breast halves
  •  Vegetable cooking spray
  • 1/4 c soy sauce
  • 1/2 c orange marmalade

Directions
  • Step #1 Cut chicken breasts into 24 (1-inch) cubes.
  • Step #2 Wrap each chicken cube with bacon, & secure with a wooden pick.
  • Step #3 Stir together orange marmalade, soy sauce, sesame oil, ground ginger, & minced garlic in a shallow dish or large zip-top freezer bag; add chicken nuggets.
  • Step #4 Cover up or seal, & chill 2 hrs, turning every once in awhile.
  • Step #5 Coat a rack & broiler pan with cooking spray.
  • Step #6 Place chicken nuggets on rack in broiler pan.
  • Step #7 Bake at 450° for 10 mins; turn & bake 10 more mins.
