Shrimp Bruschetta With Guacamole Recipe

Ingredients
  • 3/4 c freshly grated Manchego cheese
  • 1/2 c sliced fresh cilantro
  • 2 garlic cloves, finely sliced
  • 1 (16-oz.) French bread baguette
  • 1/4 c medium salsa
  • 1/4 tsp MCCORMICK Gourmet Collection Ground Cumin
  • 2 large avocados
  •  PAM Olive Oil No-Stick Cooking Spray
  •  Garnish: 12 fresh cilantro sprigs
  • 1 tbsp sliced shallot
  • 2 tsps fresh lime juice
  • 1 garlic clove, finely sliced
  • 1/2 tsp salt
  • 24 unpeeled, uncooked, fresh or frozen large WILD AMERICAN Shrimp
  • 1/4 c extra virgin olive oil

Directions
  • Step #1 If frozen, thaw shrimp according to package directions.
  • Step #2 Peel shrimp, if desired, and, devein.
  • Step #3 Set aside.
  • Step #4 Cut bread diagonally into 12 (1/2-inch-thick) slices, discarding ends.
  • Step #5 Coat both sides with cooking spray, & place on a baking sheet.
  • Step #6 Bake at 375° for 5 to 6 mins or until edges are crisp.
  • Step #7 Reserve bread on pan.
  • Step #8 Peel & coarsely chop avocados, & place this in a medium bowl.
  • Step #9 Add lime juice & next 6 ingredients, & carefully mix, being careful to retain small avocado chunks.
  • Step #10 (Do not mash.
  • Step #11 ) Chill until ready to serve.
  • Step #12 Sauté garlic in hot oil in a medium skillet over med-heat/flame 1 min.
  • Step #13 Add shrimp, in batches, & cook 2 mins on each side or just until shrimp turn pink.
  • Step #14 (Shrimp should be slightly undercooked.
  • Step #15 ) Remove from pan, & place 2 shrimp on top of each baguette slice on baking sheet.
  • Step #16 Top each with 1 Tbsp.
  • Step #17 Manchego cheese.
  • Step #18 Broil 5 inches from heat 1 to 2 mins or until cheese melts.
  • Step #19 Remove from oven, & top each with 1 to 2 Tbsp.
  • Step #20 avocado mixture.
  • Step #21 Garnish, if desired.
  • Step #22 Serve as soon as possible.
