Pomegranate-avocado Salsa With Spiced Chips Recipe

Ingredients
  • 3 tbsps fresh lime juice
  • 1/2 tsp sugar
  • 1 c pomegranate seeds (about 1 medium pomegranate)
  • 1/2 c minced fresh cilantro
  • 1/2 tsp salt
  •  Cooking spray
  • 1/2 tsp onion powder
  • 2 tbsps honey
  • 1 jalapeño pepper, seeded & minced
  • 1/2 tsp salt
  •  Chips:
  • 1 tsp paprika
  • 1 1/3 c sliced peeled avocado (about 2 avocados)
  • 12 (6-inch) corn tortillas, each cut into 8 wedges
  • 1/2 c thinly sliced green onions
  •  Salsa:
  • 1/2 tsp garlic powder
  • 2 c clementine sections (about 6 clementines)
  • 3/4 tsp ground cumin

Directions
  • Step #1 Preheat oven to 500°.
  • Step #2 To prepare chips, cumin, 1/2 tsp salt, garlic powder, sugar, mix paprika, & onion powder in a small bowl.
  • Step #3 Arrange tortilla wedges in a single layer on 2 baking sheets; coat with cooking spray.
  • Step #4 Bake at 500° for 5 mins.
  • Step #5 Turn wedges over; coat with cooking spray.
  • Step #6 Sprinkle top paprika mixture evenly over wedges.
  • Step #7 Bake an extra 2 mins or until lightly browned.
  • Step #8 Remove from oven; cool completely.
  • Step #9 To prepare salsa, mix avocado & juice in a medium bowl; toss carefully to coat.
  • Step #10 Add clementine sections & remaining ingredients; toss carefully to mix.
  • Step #11 Serve salsa with chips.
