Truffled Asparagus Crostini Recipe

Ingredients
  • 1 lb asparagus spears, trimmed
  • 2 1/2 tsps truffle oil or extravirgin olive oil
  • 1/4 tsp salt
  • 1/2 c (2 oz) grated Manchego cheese
  • 24 (1-inch) slices French bread baguette
  • 1/8 tsp freshly ground black pepper

Directions
  • Step #1 Preheat broiler.
  • Step #2 Arrange baguette slices in a single layer on a large baking sheet; broil 1 min or until lightly browned.
  • Step #3 Remove from oven; turn over & broil 1 min or until lightly browned.
  • Step #4 Remove from oven; cool on pan.
  • Step #5 Fill a large skillet with water to a depth of 1 inch; bring to a boil over medium-high heat.
  • Step #6 Add asparagus; cook 2 mins or until crisp-tender.
  • Step #7 Drain & plunge asparagus into ice water; drain.
  • Step #8 Chop asparagus to measure 2 c.
  • Step #9 Place sliced asparagus in a bowl.
  • Step #10 Add oil, salt, & pepper; toss well to coat.
  • Step #11 Top each bread slice with 1 rounded tbsp asparagus mixture; place on a baking sheet.
  • Step #12 Sprinkle top cheese evenly over crostini.
  • Step #13 Broil 1 min or until cheese melts & begins to melt.
  • Step #14 Serve warm.
