Seared Scallops Recipe

Ingredients
  • 12 large sea scallops
  • 1/4 tsp salt
  • 1/2 c butter
  • 2 tbsps sliced fresh flat-leaf parsley
  • 1/4 tsp freshly ground pepper
  • 1 lemon, cut into wedges

Directions
  • Step #1 Microwave butter in a small glass bowl at HIGH 30 seconds or until melted.
  • Step #2 Skim off milk solids with a spoon, reserving 1/4 c clarified butter.
  • Step #3 Sprinkle top both sides of scallops with salt & pepper.
  • Step #4 Heat a large nonstick skillet over medium-high heat.
  • Step #5 Add butter; heat 2 mins or until golden brown.
  • Step #6 Add scallops; cook 3 mins on each side or until golden crust begins to form.
  • Step #7 Sprinkle top with parsley.
  • Step #8 Serve with lemon wedges.
  • Step #9 Wine note: "Tablas Creek Esprit de Beaucastel ($30) from Paso Robles, California, works with the scallops.
  • Step #10 The dish here is relatively simple, so let the wine take it away.
