Smoked Trout With Apple-horseradish Cream On Potato Pancakes Recipe

Ingredients
  • 1/2 c grated fresh onion
  • 1/2 c all-purpose flour (about 2 1/4 oz)
  • 2 tbsps plain fat-free yogurt
  • 4 tsps prepared horseradish
  •  Cooking spray
  • 1 tsp salt
  • 3 tbsps finely sliced Granny Smith apple
  • 4 oz smoked rainbow trout, bones removed, broken into 48 pieces
  • 2 large egg whites
  • 3 tbsps olive oil, divided
  • 3 tbsps sliced fresh chives
  • 1/2 tsp freshly ground black pepper
  • 4 3/4 c shredded peeled baking potato (about 2 lbs)
  • 1/4 c reduced-fat mayonnaise

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into a dry measuring c; level with a knife.
  • Step #3 Combine flour & next 5 ingredients (through egg whites) In a large-ish bowl, stirring until mixed.
  • Step #4 Divide mixture into 48 level tbsp-sized pancakes, squeezing each to remove excess moisture.
  • Step #5 Heat 1 tbsp oil in a nonstick skillet over medium-high heat.
  • Step #6 Add 16 pancakes; cook 3 mins on each side or until browned.
  • Step #7 Arrange on two baking sheets coated with cooking spray.
  • Step #8 Repeat procedure twice with remaining oil & pancakes.
  • Step #9 Bake at 400° for 5 mins or until cooked through.
  • Step #10 Combine mayonnaise, yogurt, apple, & horseradish in a small bowl; place 1/2 tsp mayonnaise mixture on each pancake.
  • Step #11 Top each with a trout piece; sprinkle with chives.
